Banana Mousse Cream Ice Cream

I’m part of a banana-loving family. Seriously, we like bananas in a lot of our desserts – banana bread, banana cake, banana cream pie, banana milk shakes, banana cupcakes, and now! banana mousse cream ice cream.

My husband (nonchalantly) wished he could have a frozen creamy banana treat. He had just come from watering the plants in 104┬░ Texas heat; of course he wanted something fresh and COLD! You don’t need an ice cream maker, nor do you need anything but a whisk and some muscle power if you don’t own a hand mixer or stand mixer.


1 tsp vanilla extract
1 large banana; sliced
1 large banana; mashed
2 cups heavy whipping cream
1/2 cup of sweetened condensed milk
1 small box (3.4 oz) of instant banana pudding mix

Whip the heavy cream for about 1 minute or until you see it starting to fluff.
Add banana pudding mix, vanilla extract, and the sweetened condensed milk.
Continue whipping until solid/stiff peaks form.
Fold in your large mashed banana.
Pour mixture into large, flat pan or reusable ice cream container.
Top with sliced bananas.
Optional: Fold in or top mixture with sliced bananas, strawberries, vanilla wafers, and/or macadamia nuts.

Freeze your covered mixture for 5-8hours.
Serve and top with your favorite toppings.



Influenster Sprout VoxBox

Hey y’all! So I received my first VoxBox from Influenster two weeks ago and it was pretty good. I received five samples to try:

Unfortunately I wasn’t one of the lucky few who received the Vichy LiftActiv Serum 10 Supreme. Maybe next time. It’s not like I’m getting older or anything and need to start using some anti-gravity-anti-aging products. Ha!

BoxTops Flop

How many of you collect BoxTops for your kids?

*raises hand*

I do! And I have been for several years now. But this year I’ve become so lazy that I throw them in our junk drawer and never look back. Big mistake. Look at those tops I’ve wasted!


Such a shame. Any chance I can still turn those little suckers in and┬ástill receive credit for my daughters school? Anyone? I’m kinda glad I cleaned our kitchen drawer this morning (more like ransacked it for these in particular). I did find current BoxTops and separated them by year – because I’m a little weird like that.

Do y’all┬áhave any tips on collecting BoxTops and securing them safely?

Easter PEEPS Cake

Last night I had my daughter and her BFF decorate a four-layered chocolate and strawberry cake we baked. (I like introducing my kiddo to baking and cooking to learn simple┬áculinary dishes – to teach her independence. NOT to┬áfend for herself in the mornings mommy and daddy like to sleep in!)
